I went on a special adventure yesterday with Mrs. Nye.  She invited me to join her on a trip to Lantz’s Bulk Foods, about a 30-40 minute drive (we took a few detours, so I’m not sure exactly how long it would take if you were heading straight there).  It’s in Wyoming County (or maybe Lancaster?), near where Mrs. Nye grew up, and is run by an Amish (or Mennonite, I’m not sure which) family.

What a gem it was!

They had a small cafe (cafe implies it was cute and fancy, which it wasn’t; think more utilitarian, perhaps even the kind of hole-in-the-wall place only the locals go), a refrigerated meat and cheese case, a small section of books and cookbooks, and aisles of dry goods.

There were decent amount of people there, both eating and shopping, that it’s clear this store is a landmark among the miles of open farmland surrounding it.

Obviously, the spices and flours captivated me the most.  I walked the aisles completely, taking it all in, before I grabbed a basket and, for lack of a better word, went crazy.  The photos of my haul follow these, taken at The Valley Inn, in Warsaw.  Mr. and Mrs. Nye go occasionally and it’s been on my to-go list for awhile now–we just never think of it.

It’s in a quaint farmhouse just off the road in the middle of the village there.  I walked in and felt like I was in Bucks County, Pa., where I used to live.  The decor was very ‘Revolutionary War-era’ and classy.  In my snow boots, I felt just a tad under dressed!  (Thankfully, I’d happened to wear a nice sweatshirt and scarf, and since it’s snowy and we’re in Western New York, everyone else was wearing snow boots with their khakis, too.)

Mrs. Nye recommended the she-crab soup, which immediately made me want it.  It wasn’t until the last seven or eight years or so that I’ve come to really like seafood and fish.  Growing up, I avoided it like the plague as much as I could get away with, but now I find I really like most of it.  New Year’s Resolution no. 6 (or it is 7?): make fish once a week.  (We’ll see how long that lasts; Andrew is likely to revolt!)

Despite my resolve to eat more fruits and vegetables and less of everything else, I had to order the rueben.  It was calling to me.  I have such a hard time ordering salads at restaurants, as I eat them so much when I’m at home.  Eating out is such an experience to me that I hate ruining it–especially my first time somewhere–by getting something I didn’t really want in the first place.

Their New York salad sounded fantastic–apples, sweet potato chips, sunflower seeds, hot dressing–but I can make that at home.  A rueben, I can’t.  (Well, I COULD, but who does that with any regularity?)

I splurged and got the fries in hopes they’d be good–they were.  Too good.  Andrew will love them.  I consider it a personal victory that I left about half of them on my plate.

I spent the rest of the afternoon enjoying a cup of coffee with the rest of the gang at the Nyes’ upon our return, and then took Hadrian out for a cold, snowy walk to Firefly Cupcakes.  (More on that shortly.)

When I arrived home, I set out my purchases to photo (and show Andrew).  Oat and rye flours (both of which I needed and at these bulk prices, I couldn’t refuse), whole-wheat couscous, tapioca, angel food cake mixes (again, about half the price of our local Tops or Wegmans!), spices and some pasta.

My biggest splurge: black cherry juice concentrate.  I have a cherry ice cream recipe I’ve been wanting to make for Andrew (his favorite flavor at Graeter’s) that calls for it and I’ve only seen it from King Arthur Flour, which would be more expensive PLUS shipping costs.  I threw it in the basket with gusto.

Look!  My nails match the Valentines’ Day decors!  Cute pink sprinkles and hearts, as well as coarse red sanding sugar.

Look at that price!  Half the sprinkles would be double that at Tops.  I love you, Amish bulk foods people.

Whole nutmeg.  Interestingly enough, I’ve been wanting to grate my own nutmeg for some time now.  Andrew even asked if I needed a nutmeg grinder in my stocking this year.  I think I can use one of the surfaces on my microplane grater, but I’ll take a small mortar and pestle, as well as an electric spice grinder, honey.

I’ve found that my cookbooks, especially Barefoot Contessa’s, can’t stress enough the difference between freshly ground black pepper and nutmeg.  Just opening the lid of the nutmeg convinced me.

I wanted to get Andrew a treat for while I’m gone–heading to Ohio in just a couple hours–and I thought he’d like these:

I couldn’t resist.

Another neat thing happened yesterday while we were out.  My friend, Wendy, the owner of Firefly, texted me asking about a hummingbird cake recipe.  Apparently they’re experimenting with a new cupcake flavor over there and she knows I like hummingbird cake.  I don’t even know why I like it so much…  Obviously, the banan/pineapple/cinnamon/coconut/cream cheese frosting combo is fantastic, but it’s more than that.  Hummingbird cake is an old, Southern tradition reminiscent of the 1950′s.  Traditional.  Home-maker-ish.  Heels and pearls in the kitchen-ish.  Everything I’m not but (kind-of) want to be, in my own, updated and modern kind of way.

I was excited.  And what a boon it was to be with Mrs. Nye when it happened.  We immediately started talking hummingbird cake recipes and baking (as if we hadn’t been already).  When we got to her house, she dug out this 1990 issue of Southern Living:

You can see she made a note, “very good,” next to the Hummingbird Cake recipe below.  Apparently, it appeared in 1978′s issue and became Southern Living’s most requested recipe!  What a treasure Mrs. Nye has right there!

I texted with Wendy and marched myself (and Hadrian–he was in desperate need of some exercise!) over to Firefly where a sweet blonde employee (I wish I’d caught her name) ran a 2-pack of whatever iteration they’re on  out to me in the snow.

They’re a little worse for wear–I was walking a giant dog home in the snow–but good thing that doesn’t detract from taste.  Wendy thought they were a little too banana-y, and I agreed.  When I think of hummingbird cake, my first thought is of pineapple and cinnamon and coconut (which I don’t believe was in the SL recipe, but has become a well-known addition) more than banana.  My thoughts: less banana, more pineapple and cinnamon. Perfect amount of coconut.  I even found a recipe online that called for ginger, but that’s probably stretching it a bit.  I’m a huge fan, but not everyone is.  Although just a TINY bit could add a little warmth, especially with the cinnamon…

Anyway, I shared my thoughts with Wendy and am going to deliver the other one to Mrs. Nye, who has the benefit of years of baking experience and is very familiar with hummingbird cake (so many people these days aren’t), and I can’t wait to hear what she says!

As I walked home with Hadrian yesterday, as the sun was going down and despite the icy snow blowing in our faces, I could not even contain my smile as it spread right across my face.  A day spent surrounded by good food and dear friends, good conversation, asked for my two-cents on a recipe (who doesn’t like that?), and here I am, walking with Hadrian on an errand.  I even saw a friend from school who was volunteering at the co-op office!

Hadrian was happy to be outside and I was happy to take him, enjoying that I can walk to Main Street and see friendly faces along the way.  This is my hometown, now, and there isn’t anywhere else I’d rather be.

I got incredibly ambitious last night.  For awhile now, I’ve wanted to send a box of goodies to a friend of ours’ who is a single dad while his wife is deployed, and I figured I’d send her a box while I was at it.

At this same time, I happened to have been given a recipe for sour cream cut-out cookies from Mrs. Nye (who was very clear about it being the recipe of a childhood neighbor, who actually used to send them overseas as well!), AND I happened to have extra sour cream sitting in my fridge (which NEVER happens).  It was as if the stars had aligned.

I initially thought Andrew and I could tackle the job together, which we both approached with some degree of trepidation.  Let’s just say I haven’t done a good job of sharing my kitchen with others.  Resolution no. 5: don’t be such a Nazi in the kitchen.

Anyway…I invited Adam over to play games with Andrew instead, and I went about my business in the kitchen within earshot–which is just where I like to be.  I love that this kitchen allows me to be part of the action in either the dining room or living room.  (There are other things I DON’T love about the kitchen, which will be a post all its own.  I’ve had a vision!)

ANYWAY….back to cookies.

I SO wanted to make “2013″ cut-outs, but I got rid of the giant tub of letters/numbers/seasonal shapes forever ago because I never used it.  So, I was left with cookie cutters in the shape of a pineapple, a Penn State paw print, a giant pumpkin or circle biscuit cutters.  Seeing as I’ve NEVER used the pineapple I’m sure I begged Andrew to buy, I figured now was just the right time.  And my deployed friend–an avid blog reader–would get a kick out of it.  (Hi Heather!)

I mixed and rolled and found it to be much easier than expected.  Cookies aren’t often my dessert of choice; they just seem to be too much work for nothing very impressive.  Not that I don’t have some awesome recipes–I just hate that I have to keep rolling/scooping/cooling and taking sheet pans in and out of the oven.

I decided on royal icing since the cookies were going to be shipped–I didn’t want a sticky mess!  I used Martha’s recipe (from her Baking Handbook) and subbed plain gelatin for meringue powder.  (You can also use egg whites or egg white powder, but I was fresh out!)

I had a ball decorating them–some pineapples, some circles–with tinted frosting, sprinkles and colored sugar.

The cookies turned out well–I hope I didn’t overbake them.  (I’ll find out today; Mrs. Nye and I are taking a field trip to some Amish/Mennonite bulk food store…probably worth a blog post all its own!)  The cookies aren’t overly sweet like a sugar cookie, and neither is the royal icing.  They remind me a lot of those cookies you can get from the bakery at the grocery store that are cake-y and sof and covered with a thick coat of hurt-your-teeth-sweet frosting.  You know the ones–they’re always iced with whatever color frosting is appropriate for the season.  If I weren’t mailing these, I would have slathered on some buttercream! (Because THAT’S what my waistline needs right now…)

As usual, somehow along the way it turned into FOUR boxes of cookies to be shipped, as well as a bunch sent home with Adam, and still others wrapped up to be distributed to friends in the next couple days (hello Ohio readers!).  It’s self-defense, really; if they sit on my counter, I will eat them.  ALL of them.  I left us two circles and two broken pineapples to enjoy.

And, of course, the dishes in the dishwasher were CLEAN.  A huge, giant, can’t-thank-you-enough hug to Andrew for cleaning up my mess, and taking the dog out, and taking the trash out AND not getting impatient with me while I packed up all the cookies at, oh, 11:30 p.m.

We have three friends who are single dads right now (two whose wives are deployed and one who, well, these things happen sometimes) and it’s been on my heart to show them some love lately.  Andrew stacked the boxes kinda precariously so as not to reveal any addresses…!

I’m in a state of severe lack of motivation to work out…  All I want to do is STAY IN and enjoy my house and morning and GO SLOWLY.  I’m trying not to feel guilty skipping swimming this morning, and I have been running and going to kickboxing every other day.  I think I’m just burned out.  I’ll be in Ohio in TWO DAYS with a great friend who has the same eating and working out goals as I do, so I’m hoping this weekend will be a chance to relax and rediscover my love of healthy eating (um, the sweets have taken over my life lately!) and exercise :)

I made it through today (Wednesday I leave at 8 a.m. and don’t return until almost 9 p.m.) and am exhausted.  I have an open Chem lab in front of me to complete, two GIANT tests coming up in the next couple days (one is Friday; the bigger one is Monday, thank goodness!), as well as a ‘to-do’ pile the size of Texas.

And all I can think about is baking.

Tomorrow, I am not painting.  I am not doing yardwork.  (Unless, of course, it’s beautiful and I need a break and the guilt overcomes me.)

I’m baking and studying.  Baking, studying.  Repeat.

There will be cinnamon apple scones.  There will be pumpkin amazeballs.  There might even be another treat, although it’s hard enough around here to eat what little I DO find the time to make!

And, not only do I get to bake–I get to cook!  Our neighbors had their baby and I’m bringing them dinner :) She’s a vegetarian (the mom, not the baby, obviously), so I’ll be giving them a quinoa dish with zucchini, dill and feta, as well as our favorite Nutty Sweet Potato Soup and a green salad.  Oh!  And I can make bread!  In the breadmaker…I’m already probably too overcommitted (ahem, the still un-done lab in front of me).

Alright…enough procrastinating.  Eyes are drooping.  Still have to pack the swim bag for the morning.  Sheesh…

It’s my day off of school and for once, I have nothing to do.  Nothing…  EXCEPT STAY HOME AND CLEAN!

WHOO-HOO!

Seriously, I’m almost shaking with excitement.  I’ve had so many things going on lately (school, interviews for the paper, grocery shopping, school, trying to work out…) that I haven’t had a chance to keep up with the regular day-to-day cleaning (and trust me, it shows).  Couple that with extra dust from a house project, clutter and the fact that I’m completely OCD about it all–and you’ve got one crazy girl who can’t take it anymore.

My Thursdays are usually full of errands and things (or 24 hours of painting!), that I can’t just CLEAN.

So, that is what I’m doing today.  And I’m making a loaf of garlic french bread in the breadmaker (what a life-saver that invention is!), and plan to make some zucchini bread if time permits as well.  Other time-permitting events include a trip to the post office (I will get Summer Rental back to you at some point, Emily!) and painting doors and trim in the guest room upstairs.  If I don’t get to them, oh well :)  There is always this weekend…

Speaking of this weekend–Andrew says I might be painting the laundry room, too!  FINALLY.  Cannot wait to post pictures of that!

Now that’s something I haven’t made in, oh, since we lived in our first APARTMENT in Ohio…  Guess I’m not a big fan, huh?  I think it’s because my mom’s monkey bread always came out a little burned and the pieces (except for those few cherished center ones) came out really hard and crunchy.  (Andrew said the same thing, so it must be normal.)

Anyway, last week Andrew asked–no, begged–for monkey bread and I said I’d see what I could do.

While I love to make bread, I don’t normally get up so early that I would have dough already risen and ready to go into the oven before he even leaves for work, at least not these days.  So, I cheated and bought the frozen bread dough at Tops.  (Apparently you can use canned biscuits for an even quicker version.)

Forgive the picture.  Andrew snapped it quickly to send to his sisters (what a nice brother, bragging to them that he got monkey bread and they didn’t…) and I hadn’t anticipated blogging about our breakfast. Not sure why the dough looks yellow…  Reason number 506 that I can’t WAIT for our new house: LOADS of natural light!

Anyway, I hadn’t a clue how long it would take to bake or in what proportions I would mix the cinnamon and sugar, so I Googled.  I found Pioneer Woman’s recipe and it looked slightly different than what I’d made the last time, so I thought I’d give it a whirl.  I’m glad I did–Andrew said it was the best he’d ever had.  Must be the butter and brown sugar mixture you cook and then pour over the top.  No, people, this is not health food.  Not one bit.

And before I leave you, I simply must tell you the story of how Andrew made monkey bread that time long ago in our apartment (well before blogging, but oh, that would have made a great post!)…

Here’s the scene:  I come down the stairs to the kitchen to find him standing in front of the stove (one of those with the four coil burners on the top), on one side of the stove top was a bowl of melted butter and the dough pieces, and on the OTHER SIDE of the stove top was the bowl of cinnamon sugar.  I watched him take a piece of dough, dunk it in the melted butter (the way I assumed monkey bread was made until I read PW’s post) and DRIP DRIP DRIPped across the stove to the cinnamon and sugar bowl, and then DRIP DRIP DRIP[ed back across the stove top to the Bundt pan.  I still remember the horrified gasp I let out when I saw the mess he was making.

It’s funny now, but I still wonder how someone with THREE degrees (two of them in Engineering!), does the things he does and still makes it through the day.  Guess we’re all good at different things, huh?  Now that I type that, I think that’s what 6.5 years of marriage has taught me; I love him, despite his “imperfections,” just like he loves me, despite mine.  And oh, I have some imperfections!  (Mine just don’t include making messes…)

I love you, honey, and I was so happy to make you that special breakfast today :)

(An alternate title to this blog could read: ‘On why I might make an OK mother after all’)

Andrew and I are flying to DC this weekend to spend the holiday with my family, and we enlisted Abigail to come stay with Hadrian instead of kenneling him.

My first thought was of all the goodies I could have out for our houseguest.  I can’t help it.  It’s the pineapple in me.

(Hadrian is also all stocked up on toys, too.)

However, between all of the Layers being on ‘diets’ (some more strict than others), and my unwillingness to buy what I call ‘crap,’ (gosh, that sounds harsh) you won’t find Combos or Cheetos or anything of that nature lurking around here!

Bananas, apples and oranges, as well as a selection of pseudo-healthy cereal bars and things (just about anything is ‘healthy’ in moderation, I think), and some crunchy things like Quakes and multigrain tortilla chips.

In the fridge Abigail will find celery and baby carrot sticks, as well as strawberry yogurts and 100% juice boxes.

There are even goodies in the freezer!

I walked down the frozen section in search of acceptable popsicles, when I came across all these Skinny Cow treats ON SALE.  I tell you, it was like the White Mint bars were CALLING to me.  And I know one of Abigail’s favorite flavors is cookies and cream, so I had to get both.  Of course.  I threw in some lemon sorbet bars thinking Andrew would like that flavor as well.

And, not to out-do myself or anything, I included a selection of the things I’ve made with the abundance of overripe bananas we’ve had on hand: strawberry-banana muffins, my banana bread with coconut and walnuts turned into muffins, and King Arthur Flour’s Chocolate-Chip Banana Squares.

In making my favorite banana bread into muffins, I decided it needed to be even healthier!  One and a half cups of sugar just seemed WAY. TOO. MUCH–even for two loaves–so I slashed away…again.  Here is my updated page with the recipe.  The muffins baked up nice and high; this is, hands down, the BEST banana bread recipe EVER.

I’ll also be putting out some of Andrew’s butter-flavored microwave popcorn bags, some of my favorite mac and cheese in a box (Annie’s!) and coffee pods.

I’m sure Hadrian will have a ball with Aunt Abigail (she calls him ‘horsey’), and we’re happy to have her come stay and keep the animals company.  I just hope she doesn’t think all my ‘health food’ is too weird…

…and it was a yummy one!

A couple days ago, as I was packing Andrew’s lunch (yes, just one of the gazillion things I said I’d never do) all I had left in the bottom of the Julio’s chips bag was a bunch of crumbs.

And immediately, I thought of a mexican breakfast/egg dish kind of thing.  Why?  No idea.

I held onto the bag of crumbs and finally made my concoction this morning, sauteeing onion and red bell pepper with the eggs, and added leftover chorizo (score!), some salsa, avocado, green onion and monterey jack cheese.  All this atop Julio’s seasoned chips.  Just delightful.

I kept it light be serving just these on the side:

Strawberries and half an orange.  Just delightful :)

Happy Wednesday afternoon!  I’m making some King Arthur Flour’s Banana Chocolate Chip Squares (another blogger was nice enough to type up the recipe) to bring to the co-op‘s first annual meeting (!!!!) tomorrow night, and will be continuing The Hunger Games.

Oh, and do any of you like radishes?  I admit I’m not a huge fan, but after writing my latest ‘Eat This’ column for the co-op’s blog, I think I might give them another try.

This is what happens when Holly goes to Wegmans for ‘a few things:’

Hey, at least it’s all healthy, right?  Just LOOK at all those colors!

HAD to get:

-bananas and spinach (only one left in the house–yikes!)

-cottage cheese (I have a cut-up pineapple in the fridge just begging to be paired with it)

-avocado (remember all those Julio’s chips Andrew shipped home??)

-strawberries (because I’ve waited all winter long for them)

-red pepper and sugar snap peas (homemade hummus is in the fridge as we speak–or type, rather)

-wheat germ (for a bread recipe)

-frozen blueberries and a lemon (for a muffin recipe and because berries are expensive enough)

-deli ham and light swiss (Andrew’s gotta have lunch tomorrow…)

OK, I’ll admit, I totally got sucked into the Nature’s Market section (like I ever DON’T?) and some SALES caught my eye…

…like this one for Health Valley Organic cereal bars and ‘pop tarts.’  It was $1 off each, and the blueberry was just calling to me.  (Blueberry totally has been these days!  I already made a plan to make Ellie Krieger’s blueberry muffins this weekend…)  I figured Andrew would like the strawberry bars and I could mix some warmed ‘toaster tarts’ into our morning breakfast routine.

And then there was the sale on granola:

It was $1 off, too!  In my defense, we’ve been out of granola for awhile now and I said to myself (out loud, of course) that I should get some more soon.  I initially saw the ‘vanilla blueberry with flax seeds’ (there is that blueberry again) variety and grabbed it, only to then see the ‘maple walnut with chia and quinoa’ and ‘oat and honey WITH COCONUT’ flavors…  There was just no deciding between them.  At least they’ll last awhile…

Side note: Some of you are probably wondering why I would BUY this stuff when I can make it all myself, which I actually enjoy doing.  A couple reasons:

1.  I’m EXHAUSTED, and surprisingly busy.  I’ve been catching up on random stuff since finishing up with school, as well as tackling a bunch of things that popped up, like arranging summer travel plans and working out a new gym routine.

2.  I don’t really enjoy cooking in this kitchen.  It sounds bad, but it’s true.  Until I have ‘my’ kitchen, it just isn’t the same.

3.  I’m starting The Hunger Games soon (maybe this weekend!), which will consume me for however long it takes to read them all.  Andrew, I apologize in advance–I’ll make sure we’re stocked up on the unhealthy food you insist on eating when I don’t cook.  Or maybe not.

4.  The bright colors and yellow SALE tags caught my eye.  (Hey, I’m just being honest.)

5.  And lastly, I am (unfortunately) about to become just as busy as before.  My summer online class starts in a little more than a week and I already took a look at the online info…  It looks INTENSE, to say the least.  Fantastic.

So yeah, despite ending school, I won’t be found in the kitchen too much just yet…

OK, back to groceries….

The Justin’s was on sale ($6.99 instead of $8.99… still pricey, but oh, so good!) and I’ve been eyeing this Cinnamon Raisin Swirl variety EVERY TIME I GO TO WEGMANS.  EVERY TIME.  I pulled the trigger today–why not?  Kath eats almond butter on her carrots sometimes, and ever since I saw one of those photos I’ve been intrigued to try it.  I thought the Justin’s would be the perfect accompaniment for some carrot sticks.  (Oh, have I told you all I’m eating raw carrots now?  I went my whole life HATING them, and then all of a sudden, they’re fine.  What’s with that?)

And this guy was hiding behind all the store-bought goodness the whole time…

Beautiful, wonderful-smelling homemade bread.  What better with which to pair the new cinnamon raisin peanut butter??

So… Today in Chemistry, we tackled this equation:

Like, as in the one Einstein came up with all that time ago.  It has to do with energy, mass of nucleons (neutrons and protons) and the speed of light.

Can I just say that five years ago, I would NEVER have guessed I’d be where I am right now?  In so many ways…

In other news…

1. Andrew comes home this afternoon!  I feel all giddy inside… I guess absence DOES make the heart grow fonder :)

(Psst!  I’m making bagels as a surprise for his return… Since he doesn’t have a smart phone, there is no way he can see this before he actually arrives home, so I thought I’d share–in a whisper voice–to add to the suspense.)

2.  I have confirmed that I am OFFICIALLY finished with Microbiology, with A’s in both lecture and lab.  Thus, I’ll be making bagels this afternoon when I would have normally been in lab.

3.  It’s my birthday month!  WOO-HOO!  Birthday list is being made and tweaked as I speak…  (That’s how Andrew’s family does it; they practically DEMAND a list two months in advance, and hound you if you don’t provide one soon enough.  I. LOVE. IT.)

On the list this year: a pair of Crocs, better, non-warping baking sheets and other miscellaneous clothing items.  (If you’re reading this and need “the list,” Andrew can provide it to you :) )

4.  Emily’s birthday is the same day as mine.  God really knew what he was doing when he arranged our chance meet-up at a friend-of-a-friend’s bbq, in which Emily and her hubby were attending as friends-of-a-mother…

5.  Pineapple boxers!

Andrew and I found these at Gap a couple weeks ago.  It wasn’t even a discussion; I held onto those things for dear life.  I mean, how could we NOT buy them?  They have been washed and are currently in my jammie drawer, waiting for warm weather.

6.  Andrew ate a 30-ounce steak last night at his final dinner in Texas, at some super-snazzy restaurant, I’m sure.  Thirty ounces.  THIRTY.  People, 16 ounces is a POUND.  He’s already requested salads for the forseeable future…

7.  While I’m super excited for Andrew to come home, I don’t know that I’m ready to give up the clean, quiet, organized and peaceful house/routine I’ve enjoyed for the past week…

8.  Here’s a good one:  To those who continue to ask about whether or not we’ve found a house:  Yes, we’re still house-hunting.  We will continue to house-hunt until we find one.  New houses are coming up on the market now that it’s spring, but it’s been a little slow.  (No, I’m not upset, but I’ll admit that the question, “So, are you still house-hunting?” gets old.  We’re in a tiny rental with gross carpet, no yard and no dishwasher–OF COURSE WE’RE STILL HOUSE-HUNTING.)

9.  Speaking of houses, we’re seeing a fixer-upper tomorrow night, and one popped up just today that piqued my interest. A LOT.  Prayers please!!

At least this one has been…  Playing, and school-working, and running and cooking…   I have been a BUSY girl these last few days, filling my extra free time to the max!  So busy, I haven’t even had time to BLOG-gasp!

Let’s see…where did I leave off?

Well, Andrew’s long gone, but I can’t not post about the fantastic dinner we had Wednesday.  Foreign!

I pulled this recipe for Banh Mi sandwiches out of a Food Network magazine back in 2008 or 2009.  It has, literally, been sitting in my “to try” recipe binder (in the fish section), waiting for such a time as this.  Well, the stars aligned last week and I finally made them…

You can see the fish peeking out from under the watercress and carrot.  The seasoning for the fish was super easy and really good–I just sauteed coconut oil (which is solid at room temperature) for a minute or two, added some Thai red curry paste and cooked it a little longer, then slathered it all over the fish before broiling.  It smelled SO GOOD.  I’m keeping the recipe because I think it’s such a unique flavoring, and the asian sauce you make to go with it was a winner, too.

Disclaimer: About a minute after I took the photo, I traded the magazines for the laptop and perused my usual: Kath’s blog, Facebook and People.com.  I call them my guilty pleasures.

Check out that perfectly browned cheese!  With a good red sauce, hawaiian pizza cannot be beat.  Although I don’t know that I’ll be using fresh mozzarella next time for pizza; it’s best reserved for caprese salad.

Thursday night was also the night I chose to clean the WHOLE house…kind of like a mini-spring cleaning.  I always clean when Andrew leaves…  The way I see it: the earlier I get the place cleaned up, I longer I get to experience a clean house without having to pick up after anyone else!  It’s been glorious…

The next morning, at 6:30 a.m. no less(!), Emily and I did one of our Made to Crave discussion dates over the phone.

Is it bad that I was eating at the same time I was discussing a Bible study about CONTROLLING eating???  I suppose I should fess up and admit I printed out TWO cookie recipes from King Arthur Flour’s ‘best cookie line-up’ just moments before this shot was taken…

Also, note the “cookie-like” object on my plate…  They’re called “Anytime Cookies” and they’re from an online site called Nourished Kitchen.  I made them a day or so before Andrew left and WOW.  Loved them!  Super easy, SUPER healthy (no added sweeteners–just sweet from dried fruit) and the texture was great.  They’re kind of like a mini-muffin more than a cookie.  But at only 127 calories, they’re easier to have as a snack with some fruit or yogurt (or both) than something bigger or heavier.  I’ve shared them with some local loved ones (and Susy in her pre-half-marathon care package–tell me what you think!) and they raved.

Recipe is linked.  They use coconut flour and unsweetened, shredded coconut.  Coconut flour is higher in protein and fiber than regular flour.  Most grocery stores with a ‘natural/organic’ section should have coconut flour there, or in their gluten-free section.  That’s also where you’ll find the unsweetened, shredded coconut–the kind in the baking aisle is (heavily) sweetened.  If you absolutely can’t find the unsweetened kind, use the regular and perhaps decrease some of the fruit.  Or you’ll just have sweeter cookies, which if you’re not used to things like plain yogurt and unsweetened applesauce, might be a good transition for you, anyway.

OK, now that I’ve COMPLETELY digressed from my weekend re-cap…

I made this recipe for sweet potato and coconut soup, the recipe for which has been hanging on the fridge forever…  I knew I’d have leftover fish from the Banh Mi, and I thought a coconut-flavored soup would be perfect. PCC Natural Markets is a ‘chain’ of co-ops in Washington State and a friend from the co-op here sent me a link to the soup awhile ago.  Thanks Mary!

I roasted the sweet potatoes instead of steaming like the recipe called for–check out these babies!  Like dessert, I tell you.

Friday was filled with school-working, since I cleaned all night Thursday…  Chem lab to finish, two Micro labs to finish, Chem practice quizzes to prep for the actual quiz, Stats homework… Not to mention paying bills, random emailing and phone-calling, co-op blogging

Friday night I enjoyed my soup topped with a dollop (I love that word, don’t you?) of plain lowfat yogurt (to sub for sour cream, of course!), cilantro and chopped peanuts, paired with leftover fish, edamame and white wine.  As my friend Regina said when she saw the photo (I sent her a photo of my food–I AM that weird)…”Def not an Andrew meal!”  Nope, not an Andrew meal, although he does eat all of these things (points for him), he does LOVE any of them.

Saturday morning, I read the paper!  What a relaxing pastime…  Now I know why people sit and read the paper on Saturday mornings…  I’m usually up and going early on Saturdays, either the gym or early-morning shopping at Wegmans to beat the crowds (I like shopping so much I’d rather get up EARLY and go to enjoy myself than be rushed and crowded–grocery shopping, to me, is an EVENT).

I did hit the gym later that morning and tried a “punk rope” class.  It’s basically a circuit-training class with jump ropes, and while it wasn’t as high-intensity as it could have been, it was a nice change and a great time slot (8:30 to 9:15) for a Saturday morning workout.

I spent the afternoon with Carolyn bridesmaid-dress shopping…

…and we found a winner!  She’s liked this one from the beginning, and was finally ready to declare that this was it.  Ours will be black with a black ribbon, and Abigail’s will be black with a hot pink ribbon.  If you’re reading this and you know Abigail, you know that that is SO her.

I’d made plans with Regina for later that night (when was I supposed to get any of my Chemistry done, you ask?  I was asking myself the same thing…), but we didn’t know if we were going to stay in, or go out, so I decided to have something ready just in case.  Enter Triple Ginger Biscotti.

Yet another recipe that’s been hanging around for awhile… Not even sure who sent it to me…?  Susy, was that you?  They turned out well, but the recipe made A TON.  Should have halved it.

Regina and I stayed in and enjoyed out biscotti and tea after walking Hadrian.  So glad she was up for a walk despite the chilly temps; I’ve been thinking a lot lately (because of Made to Crave) about how EVERYTHING we do (socially, at least) is centered around food–meeting for drinks, dessert, coffee, lunch–the list goes on.  Now that the weather is getting nicer, it will be easier to meet up for more active activities like walks or runs.  Just something I’m trying to start doing to decrease foods’ ever-present status in my life…

Sunday mornings are normally my run mornings, since it’s easier to run outside around the house than get to and from the gym before church.  Despite my late bedtime Saturday night–Regina and I were talking until at least 10:30–Hadrian got me up at 5:45 and I decided to go with it.  After polishing off some coffee, biscotti, the last Anytime Cookie and a banana, I headed out with Hadrian for our 3.4 mile loop.  I’d decided to do a long run (a.k.a. something in the 9+mile range for me), so after dropping him back off at home, I set out for my 7.4 mile loop around Orchard Park.  The stop at home was perfect; I was able to shed a pair of gloves (I wear two!) and add my sunglasses.  And since no one wants to run 10.8 miles, I added a 3-minute loop near the house, which upped it to more than 11.1.  Not an even number, but at least 11.  I was tired, but satisfied.  I hadn’t run more than 7 miles in a LONG time, so busting this out was good for me.

All that running done by 8:45 a.m.!  Still plenty of time to refuel and meet Andrew’s family for church.  I read my friend, Emily’s blog (a fellow RD-in-training here in Buffalo, not to be confused with the oft-mentioned Emily with whom I’m doing M2C) a couple days ago and she had a ‘toasted marshmallow cheesecake‘ oatmeal that I HAD TO TRY.  I knew it would be perfect post-run.

Yes, that is Trader Joe’s Cookie Butter melting on the top.  Deliciousness, and pure indulgence.  At least with peanut butter one gets a little protein; cookie butter is just dessert, people.  Also, I had to leave out the ‘mallows, I was fresh out!  But, since I’m not a huge marshmallow fan, anyway, (love ‘smores!), it wasn’t a big deal.  SO GOOD, I could have liked the bowl.  In fact, I might have.

After church and lunch at Panera with everyone, Carolyn and Ben and I headed to Target for some errand-running.  So fun to see what they registered for!  I treated myself to some new gym towels–mine were getting pretty ‘tired,’ for lack of a gross-er word–and some other things I needed.

I packaged up every last piece of that biscotti!  Had to get it out of the house for my waistline’s own protection.  Note: this photo was taken at about 4 p.m. Sunday, at which time I had YET to start any Chemistry…  I had completely one practice quiz the night before, but still had two to go.  My procrastination drugs of choice: 1.) baking 2.) cleaning 3.) anything else that needs to be done around the house.  That way, I still feel productive while ‘wasting time.’

Oh, and I also changed out my purses for spring!  Goodbye my lovely green leather (but ridiculously heavy!) bag, hello Paris purse!  The blue striped bag was a Target purchase to corral all my giftcards and coupons, since the red bag is a bottomless pit.  Not a single pocket to be found inside…

Biscotti packed up…now on to Chemistry! I did a practice quiz, followed by leftover sweet potato soup and veggies and hummus for dinner, then another practice quiz.

After taking the dog for a brief, and chilly, walk, I sat down for the real thing.  Deep breaths abounded…

And I was handsomely, and shockingly, rewarded with a 100%!  Holy smokes!!  Seriously, I know I whine and complain about Chemistry, and while I have an A in the class, it’s still super hard and I never quite know what’s really going on with all those electrons and ions and things swimming around in solution…  Anyway, I’ve NEVER gotten a 100% on a quiz in either semester of Chem so far, so this was huge.

Except that it wasn’t.  The quiz took all of 15 minutes since EVERY SINGLE PROBLEM WAS ONE THAT HAD BEEN ON THE PRACTICE QUIZZES.  I repeat: I had the answers in front of me.  Seriously. I mean, on all the past quizzes there have been a handful (maybe 5 or 6) problems that matched up with practice quizzes, but never ALL of them.  My theory?  Dr. Barton rewards those who do the practice quizzes, because that’s the kind of guy he is.  Let’s just say I was in total shock and had to keep checking to make sure I’d taken an ACTUAL quiz and not another practice quiz.  And for fear that you think I exaggerate about how bad Chemistry is, this 100% will allow me to drop the 72% I got on the last quiz…

And it was a HUGE blessing, too!  The extra time I gained by finished the quiz so early allowed me to prep my breakfast:

Pioneer Woman’s Breakfast Bread Pudding.  It’s essentially a ‘breakfast casserole’ but less egg and assembled like a bread pudding.

I order to lighten it up a bit (and it is just me by my lonesome), I halved the amount of sausage.

I am, as I type this, enjoying a bowl of this and a pear for breakfast.  YUM.
